QuickTime Player on macOS doesn’t show a visible pause button during recording — but there is a keyboard shortcut for it.
Pause / Resume shortcut
Press Space while a QuickTime recording is in progress to pause or resume it.
For audio recordings, you can also click directly on the recording waveform in the toolbar.
